Founded primarily upon the concept of osteria (“hospitality” in Italian), Osteria del Pettirosso serves up an authentic version of the often imitated but, ironically, not very well known Roman cuisine. The place was opened only 5 years ago by Roman couple Erika and Marco Renzetti, in the cozy Jardins restaurant district of São Paulo, Brazil. Despite the rustic, comforing nature of its food, the restaurant has a sophisticated, elegant atmosphere that truly makes dining there a very special occasion.

Entaste is proud to announce its recent launch in Brasil A Gosto in São Paulo, Brazil!

Having spent 2003 traveling around the cities of the 20 states of Brazil, researching and collecting inspiration from Brazilian culture and cuisine, Chef Ana Luiza Trajano returned to São Paulo to open the restaurant Brasil A Gosto (meaning “to taste Brazil”).  In addition to this wonderful restaurant, the research collected during her trip also gave rise to a book and documentary with the same title. During her journey across Brazil, Chef Ana Luiza collected information about the traditional preparation of native ingredients, utensils used, the flavors of Brazil. Fair and markets were her classrooms and the passionate cooks and fishermen heading food stalls, her professors. Chef Ana eventually discovered that Brazilian cuisine is a mixture, a fusion much richer than she had ever before imagined.

Interview with Andrew and Brook Bradbury, Rick Stoelinga and Ocean Hui of Amo Eno

 

Amo Eno, located on Podium Level 3 of Hong Kong’s IFC Shopping Mall, is a truly innovative and unique wine bar and shop based on a forward-thinking concept, and one of our favorite Entaste venues in the city.

To find out how the place operates exactly, I sat down with some of the key players behind Amo Eno: Director of Development Andrew Bradbury, Design Director Brook Bradbury, Technology CEO Rick Stoelinga, and Operations Manager Ocean Hui. The five of us discussed the underlying concept of the brand, which is an integration of the worlds of wine, design and technology. I learned about the standards by which they select the wines to offer in their enomatic machines and about what Amo Eno customers tend to look for when they walk into the store. Rick explained the one-of-a-kind touchscreen tables unique to Amo Eno, a technology which allows customers to select wines in an interactive and fun way, using up to three sets of parameters. Finally, I asked each of them to choose one wine that they have recently fallen for.

Interview with Yvonne Cheung, Chef Sommelier of The Upper House in Hong Kong

Eager to know more about Café Gray Deluxe, one of Entaste’s favorite venues in Hong Kong, I sat down with Yvonne Cheung, Chef Sommelier of The Upper House, to learn more about the famously extensive and expertly assembled wine list of the restaurant. Yvonne let me in on some of the chief differences she has experienced between working as a sommelier in North America and in Hong Kong. She also described to me Chef Gray’s wonderful food philosophy and how it manifests itself in his dishes, as well as the elegant yet comfortable décor of the restaurant and how it echoes the concept behind the cuisine. Finally, we discussed the excellent wine program at Café Gray and the unique, uncommon wines, which Yvonne affectionally refers to as her “personality quirks” and which truly set this wine program apart from some of the others in Hong Kong. When asked to choose a dish which best exemplifies Chef Gray’s cuisine, she chose the famed Braised Short Ribs and recommended with it a choice of three different wines: the 2007 Braida Bricco dell’Uccellone from Italy, a Beaux Frères Pinot Noir, or a Côte-Rôtie Syrah. What a tough choice! A glass of each should do…

With a wonderful menu thought up by Chef Raphael Buzzi, the Cherubin Grill & Bar specializes in Argentinian steaks and contemporary cuisine. Besides the premium grill, the menu also includes a great selection of seafood dishes, such as their signature cocktail shrimp with a citrusy tomato sauce and their sole with heart of palm spaghetti. Interview with Mattia Bruna, General Manager of 208 Duecento Otto

 

I recently met with Mattia Bruna, General Manager of 208 Duecento Otto, located on Hollywood Road in the Sheung Wan region of Hong Kong. We discussed the pan-Italian cuisine offered at 208 and their famous Napoletana Pizza, certified authentic by the Associazione Verace. He described to me the décor, reminiscent of the Meatpacking District of Manhattan, with a few Italian touches.  We talked about the mostly local clientele and about some of the trends Mattia has noticed in how they order. Finally, we discussed the restaurant’s mostly Italian wine list and Mattia explained why the Sangiovese grape is so prevalent on it. When asked about his favorite signature dish to wine pairing, he recommended the Dry Rubbed Ribeye with the Poggio della Badia, Brunello di Montalcino, 2007.

Entaste Launches in FoFo by el Willy!

Entaste is proud to announce its recent launch in FoFo by el Willy, located on the bustling Wellington Street in the heart of Hong Kong’s Central district. With the menu designed by award-winning Chef Willy Trullas Moreno and prepared by talented Chef Alex Martinez Fargas, both originally from Barcelona, FoFo dishes out both traditional and contemporary Spanish favorites like tapas and rice, along with soups, salads and desserts, guaranteed to please a wide range of guests. The wine list is dominated mostly by Spanish labels, with the many different wine regions of Spain very well represented – everything from the famous Riojas and Ribera del Duero to the less common, indigenous grape varieties (i.e.: Godello, Albarino, Verdejo). The décor of the place is just as creative as the menu, with a very clean, sparkling white and baby blue layout accented with slightly camouflaged, white statues of penguins and piglets, which seem to hover over the restaurant, gazing at the guests and making sure they are having a wonderful experience. The place also boasts a beautiful mountain view which adds to the tranquility one finds within. Welcome, FoFo, to team Entaste!
